Emeril's Sauteed Dandelion Greens
YIELD 4 servings
INGREDIENTS
| 2 tablespoons | olive oil |
| ½ | red onion, sliced |
| Pinch crushed pepper flakes | |
| 2 tablespoon | cloves garlic, minced |
| 4 bunches | wild dandelion greens, torn |
| ½ teaspoon | salt |
| 1/4 teaspoon | pepper |
PREPARATION:
Method
- In a large sauté pan, over medium high heat add the olive oil. Once the oil is hot, add the onion and hot pepper flakes. Cook for 3 to 4 minutes, then add the garlic and cook until just fragrant about 30 seconds. Add the dandelion greens and cook for 4 to 5 minutes until the greens just begin to wilt. Season the greens with salt and pepper.
- Serve immediately.
