Emeril's Sauteed Dandelion Greens

YIELD 4 servings

INGREDIENTS

2 tablespoons olive oil
½ red onion, sliced
Pinch crushed pepper flakes
2 tablespoon cloves garlic, minced
4 bunches wild dandelion greens, torn
½ teaspoon salt
1/4 teaspoon pepper

PREPARATION:

Method

  1. In a large sauté pan, over medium high heat add the olive oil. Once the oil is hot, add the onion and hot pepper flakes. Cook for 3 to 4 minutes, then add the garlic and cook until just fragrant about 30 seconds. Add the dandelion greens and cook for 4 to 5 minutes until the greens just begin to wilt. Season the greens with salt and pepper.
  2. Serve immediately.
