Family-Style Frankfurters with Rice and Red Beans
Makes 6 servings
|1||tablespoon vegetable oil|
|1||medium onion, chopped|
|1/2||medium green bell pepper, chopped|
|2||cloves garlic, minced|
|1||can (about 15 ounces) red kidney beans, rinsed and drained|
|1||can (about 15 ounces) Great Northern beans, rinsed and drained|
|1/2||pound beef frankfurters, cut into 1/4-inch-thick pieces|
|1||cup uncooked instant brown rice|
|1||cup vegetable broth|
|1/4||cup packed brown sugar|
|3||tablespoons dark molasses|
|1||tablespoon Dijon mustard|
- Preheat oven to 350°F. Spray 13X9-inch baking dish with nonstick cooking spray.
- Heat oil in Dutch oven over medium-high heat until hot. Add onion, bell pepper and garlic; cook and stir 2 minutes or until onion is tender.
- Add beans, frankfurters, rice, broth, brown sugar, ketchup, molasses and mustard to vegetables; stir to blend. Transfer to prepared dish.
- Cover tightly with foil and bake 30 minutes or until rice is tender.
