INGREDIENTS
| 1 | tablespoon vegetable oil |
| 1 | medium onion, chopped |
| 1/2 | medium green bell pepper, chopped |
| 2 | cloves garlic, minced |
| 1 | can (about 15 ounces) red kidney beans, rinsed and drained |
| 1 | can (about 15 ounces) Great Northern beans, rinsed and drained |
| 1/2 | pound beef frankfurters, cut into 1/4-inch-thick pieces |
| 1 | cup uncooked instant brown rice |
| 1 | cup vegetable broth |
| 1/4 | cup packed brown sugar |
| 1/4 | cup ketchup |
| 3 | tablespoons dark molasses |
| 1 | tablespoon Dijon mustard |
PREPARATION:
- Preheat oven to 350°F. Spray 13X9-inch baking dish with nonstick cooking spray.
- Heat oil in Dutch oven over medium-high heat until hot. Add onion, bell pepper and garlic; cook and stir 2 minutes or until onion is tender.
- Add beans, frankfurters, rice, broth, brown sugar, ketchup, molasses and mustard to vegetables; stir to blend. Transfer to prepared dish.
- Cover tightly with foil and bake 30 minutes or until rice is tender.
