French Toast Raisin-Style

Yield: Makes 4 servings
Ingredients:
2
tablespoons reduced-fat margarine

1
teaspoon grated orange peel

1/8
teaspoon ground cinnamon

2
teaspoons sugar substitute*

3/4
cup egg substitute

3
tablespoons fat-free (skim) milk

1
teaspoon vanilla

4
slices cinnamon raisin bread



Preparation:
1.
Combine margarine, orange peel, cinnamon and sugar substitute in small bowl; stir until well blended.

Combine egg, milk and vanilla in 13x9-inch baking pan. Using a fork, beat until well blended. Add bread slices; turn to coat. Let stand 5 minutes.

3.
Heat medium nonstick skillet over medium heat until hot. Liberally coat skillet with nonstick cooking spray. Add bread slices. (Discard remaining egg mixture.) Cook 3 minutes. Turn; cook 3 minutes more or until golden brown.

4.
Serve with margarine mixture.
