French Toast with Warm Apples
Yield: Makes 4 servings
Ingredients:
4
egg whites

2
large eggs

3
tablespoons fat-free (skim) milk

3
tablespoons sugar substitute,* divided

1/2
teaspoon vanilla, divided

1/8
teaspoon ground nutmeg

5
ounces Italian bread, cut diagonally into 4 slices

Nonstick Cooking Spray

teaspoons canola oil

1
cup sliced unpeeled Granny Smith apples

2
tablespoons water

1
tablespoon reduced-fat margarine

4
teaspoons sugar-free pancake syrup



 
Preparation:
1.
Combine egg whites, eggs, milk, 2 tablespoons sugar substitute, 1/4 teaspoon vanilla and nutmeg in 13x9-inch baking dish; stir with fork until well blended. Add bread slices; turn several times to coat evenly.

Coat medium nonstick skillet with cooking spray. Add oil; heat over medium heat until hot. Tilt skillet to coat with oil. Add bread slices; cook 3 minutes. Turn; cook 3 minutes longer or until golden.

Meanwhile, add apples, water and remaining 1 tablespoon sugar substitute to small skillet. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, 2 minutes or until apples are just crisp-tender. Remove from heat; add margarine and 1/4 teaspoon remaining vanilla, stirring until margarine is melted.

Top each bread slice with 1 teaspoon syrup and equal amount of apple mixture.
