Feed 8 Friends for Under $100 with this Green Frugal Feast: Weekend Brunch
Brunch is a great time for a party. It doesn't take up your whole day so you can be the hostess with the mostess and still get your to-do list done at the same time. Brunch can also be a less expensive time for a party because people don't drink as much and the food choices are often less expensive. Not sure what to make?
Here are some great recipes to feed your friends without breaking the bank for your next brunch.
Make your own doughnuts
Making your own doughnuts is easy and it actually looks pretty elegant. I know they're not the best things for you, but if you make them at home at least you know what you're eating and you can control your eco-impact as well.

Try my sweet potato hash.
Egg yolk drenched sweet potato hashbrowns are like silk on the taste buds. The combination is such a perfect fit that it will now be a regular on the brunch repetoire.
Sweet Potato Hash
4 large organic sweet potatoes, cut into 1-inch cubes
6 large organic green onions, diced finely
½ cup organic cilantro, diced finely
2 organic jalopeno peppers, diced finely (take the seeds and ribs out)
1/4 cup olive oil
4 tsp cumin
1/4 tsp cayenne pepper
2 cups shredded cheddar cheese
1 cup organic sour cream
8 free range eggs
salt and pepper to taste
Method
1. Roast the sweet potatoes in olive oil for about 15 minutes.
2. Sauté green onions, cilantro, and jalopeno peppers with cumin and cayenne for five minutes.
3. Top with cheese and sour cream and cover while frying eggs in another pan.
4. Season with salt and pepper. To serve put the hashbrown mix in a large serving dish and top with the fried eggs.
Cost: $24
Make smoothies and serve them in mini shot glasses so that a little goes a long way.
Stress Reducing Peanut Butter Banana Smoothie
8 organic bananas
1 cup organic peanut butter
3 cups almond milk
empty 3 to 4 capsules of the Super B stress reducing supplement.
5 ice cubes
Method
1. Blend and enjoy.
Make organic mimosas.
Juice your own orange juice and buy organic champagne for a delicious mimosa. Have your guests bring a bottle as well.
