Fruit Salad with Cherry Vinaigrette
Yield: Makes 8 servings
Ingredients:
1/2
cup fresh sweet cherries, pitted and chopped
1/4
cup orange juice
1
to 2 tablespoons honey
2
tablespoons balsamic vinegar
1
tablespoon canola oil
Pinch of salt
3
cups cantaloupe, diced
1
large mango, peeled and diced
1/4
cup almonds, sliced
Preparation:

Combine cherries, orange juice, honey, vinegar, oil and salt in a small bowl. Stir well and set aside 5 minutes for flavors to blend.

Combine cantaloupe and mango in a salad bowl. Add dressing just before serving and stir well. Sprinkle with almonds.
For a flavor variation, substitute peaches or nectarines for mango. If fresh cherries aren't available, use frozen cherries, thawed and well-drained.
