Fruit Salad with Cherry Vinaigrette
Makes 8 servings
|1/2||cup fresh sweet cherries, pitted and chopped|
|1/4||cup orange juice|
|1||to 2 tablespoons honey|
|2||tablespoons balsamic vinegar|
|1||tablespoon canola oil|
|Pinch of salt|
|3||cups cantaloupe, diced|
|1||large mango, peeled and diced|
|1/4||cup almonds, sliced|
- Combine cherries, orange juice, honey, vinegar, oil and salt in a small bowl. Stir well and set aside 5 minutes for flavors to blend.
- Combine cantaloupe and mango in a salad bowl. Add dressing just before serving and stir well. Sprinkle with almonds.
For a flavor variation, substitute peaches or nectarines for mango. If fresh cherries aren't available, use frozen cherries, thawed and well-drained.
