INGREDIENTS
| 1 | package (4-serving size) sugar-free berry- or berry-and-fruit-flavored gelatin |
| 1 | cup water |
| 1 | cup sliced frozen strawberries |
| 1 | cup frozen blueberries |
| 2 | ounces reduced-fat cream cheese |
| 1/4 | cup fat-free sour cream |
| 1/4 | cup fat-free half-and-half |
| 2 | packets sugar substitute |
| 1/4 | teaspoon ground cinnamon |
| 1/8 | teaspoon almond extract |
| Fresh lettuce leaves for garnish (optional) | |
| 4 | whole fresh strawberries (optional) |
PREPARATION:
- Bring water to a boil in medium saucepan over high heat. Remove from heat. Add gelatin; stir until completely dissolved. Stir in frozen berries.
- Pour gelatin mixture into 8-inch square glass dish or nonstick baking pan.* Cover with plastic wrap; refrigerate until firm.
Or, the gelatin mixture can also be poured into 4 (4-ounce) glass dishes, if desired.
- Meanwhile, combine remaining ingredients, except lettuce leaves, in small mixing bowl; whisk until smooth. Cover; refrigerate.
- When gelatin mixture is firm, spoon cream cheese mixture evenly over top. Serve on bed of lettuce leaves and garnish with fanned strawberries, if desired.
