Cool Down With Funky Homemade Popsicles
It can be tempting to head to the store and buy popsicles but when you see the recipes listed in this month's issue of Self Magazine, the idea of buying them seems, well, boring. When you're looking to cool down this summer consider making one of these high-end popsicles. While the article suggests using Dixie cups to shape the popsicle, I would suggest buying reusable popsicle containers instead. That way you can reduce your waste significantly and in the end, save dough.
Additionally, store bought popsicles come in a box, they are individually packaged in plastic, they are trucked in from who knows where, and that truck has to have a continually running freezer built in. The bottom line: I can hardly imagine the carbon footprint from just one measly pop. Instead, make your own, and how could you not with these delicious ideas?
INGREDIENTS
| Watermelon-Lime-Cilantro | |
| 3 cups | cubed seeded watermelon |
| 1 tbsp | honey |
| 3 tbsp | fresh lime juice |
| 2 tsp | chopped fresh cilantro |
| Chunky Pineapple-Chile | |
| 2 cups | cubed fresh pineapple |
| 3/4 cup | pineapple juice |
| 2 tbsp | fresh lime juice |
| 1 tsp | ground ancho chile |
| 1 cup | coarsely chopped pineapple |
| Crunchy Peanut Butter-Banana | |
| 3 medium | bananas |
| 1 cup | 1 percent milk |
| 3 tbsp | honey |
| 5 tbsp | natural peanut butter |
| 1/4 cup | lightly salted dry roasted peanuts, chopped |
| Avocado-Mango | |
| 3 cups | cubed mango |
| 3/4 ripe | avocado |
| 5 tbsp | sugar |
| 3 tbsp | fresh lime juice |
| 1 tbsp | grated orange zest |
PREPARATION:
- To make the popsicles, add the ingredients to a blender and stir in the last ingredient listed for texture. Pour into reusable popsicle containers and freeze for six hours. Use the same method for the other pops as well.
