Garlic Shrimp & Vegetables

Makes 4 servings

Ingredients

2 tablespoons butter
1 tablespoon olive oil
1 bunch green onions, chopped
1 red bell pepper, diced
1 pound raw shrimp, peeled and deveined
2 cloves garlic, minced
Juice of 1 lime
Salt and black pepper
Hot cooked spinach fettuccine (optional)

Preparation

  1. Heat butter and oil in medium skillet or wok over medium heat. Add green onions and bell pepper. Stir-fry 2 minutes or until vegetables are crisp-tender.
  2. Add shrimp and garlic; stir-fry 2 minutes or until shrimp turn pink.
  3. Stir in lime juice. Season to taste with salt and black pepper. Serve over fettuccine, if desired.
