Garlic Shrimp & Vegetables
YIELD Makes 4 servings
|1||tablespoon olive oil|
|1||bunch green onions, chopped|
|1||red bell pepper, diced|
|1||pound raw shrimp, peeled and deveined|
|2||cloves garlic, minced|
|Juice of 1 lime|
|Salt and black pepper|
|Hot cooked spinach fettuccine (optional)|
- Heat butter and oil in medium skillet or wok over medium heat. Add green onions and bell pepper. Stir-fry 2 minutes or until vegetables are crisp-tender.
- Add shrimp and garlic; stir-fry 2 minutes or until shrimp turn pink.
- Stir in lime juice. Season to taste with salt and black pepper. Serve over fettuccine, if desired.
