Garlic Shrimp & Vegetables
Yield: Makes 4 servings
Ingredients:
2
tablespoons butter

1
tablespoon olive oil

1
bunch green onions, chopped

1
red bell pepper, diced

1
pound raw shrimp, peeled and deveined

2
cloves garlic, minced

Juice of 1 lime

Salt and black pepper

Hot cooked spinach fettuccine (optional)



 
Preparation:
1.
Heat butter and oil in medium skillet or wok over medium heat. Add green onions and bell pepper. Stir-fry 2 minutes or until vegetables are crisp-tender.

2.
Add shrimp and garlic; stir-fry 2 minutes or until shrimp turn pink.

3.
Stir in lime juice. Season to taste with salt and black pepper. Serve over fettuccine, if desired.
