Garnet Yam and Chard Fritters
Fritters are always a good way to go if you're not sure how to use some leftover ingredients. And fritters don't have to be unhealthy. While the term fritter in itself seems to give the impression that it's dropped in the big daddy fryer until all its nutrients have dispersed, that's not always the case. Skillet frying in some high quality oil can be healthy. In addition, according to Natural Health, garnet yams help keep your vision in good shape as you age. Its anti inflammatory qualities are essential to maintaining eye health. Yams are also a source of Vitamin C, Vitamin B6, potassium, and iron. Chard helps to keep bones strong as we age reducing the chances of osteoporosis which plagues 50 percent of women as they age. Chard provides 300 percent of the RDA of Vitamin K as well as calcium, Vitamin A, C, and E to protect brain function.
INGREDIENTS
| 2 | medium garnet yams, peeled and cubed |
| ½ pound | Swiss chard, stalks removed, leaves finely chopped |
| 1 tbsp | organic olive oil |
| ½ tsp | sea salt |
| ½ tsp | freshly ground pepper |
| ½ tsp | tumeric |
| 2 tbsp | whole wheat flour |
| 3 tbsp | canola oil |
PREPARATION:
Method
- Boil the yams until cooked through. Mash them with a fork.
- Steam the chard.
- Combine the yams, chard, oil, salt, pepper, tumeric, and whole wheat flour.
- Use your hands to shape the mixture into 8 fritters.
- Skillet fry in oil for about 7 minutes until cooked through.
