Ginger Snappers
Yield: Makes 15 servings
Ingredients:
1/4
cup cottage cheese

1/4
cup vanilla yogurt

1
apple, peeled, cored and grated

4
to 6 tablespoons powdered sugar

30
ginger snaps

Orange food coloring (optional)



 
Preparation:
1.
Add cottage cheese and yogurt to food processor or blender; process until smooth. Squeeze all liquid from grated apple using paper towels. Fold apple and enough sugar into yogurt mixture to make a thick, spreadable consistency. Tint with food coloring, if desired. Using rubber spatula spread mixture onto flat side of 15 ginger snaps; top with remaining cookies. Decorate as desired.
