Ginger Snappers

INGREDIENTS
| 1/4 | cup cottage cheese |
| 1/4 | cup vanilla yogurt |
| 1 | apple, peeled, cored and grated |
| 4 | to 6 tablespoons powdered sugar |
| 30 | ginger snaps |
| Orange food coloring (optional) | |
PREPARATION:
- Add cottage cheese and yogurt to food processor or blender; process until smooth. Squeeze all liquid from grated apple using paper towels. Fold apple and enough sugar into yogurt mixture to make a thick, spreadable consistency. Tint with food coloring, if desired. Using rubber spatula spread mixture onto flat side of 15 ginger snaps; top with remaining cookies. Decorate as desired.
