Bring a little taste of Greece to your friends and family. This is a quick and simple appetizer that you can pull together at a moment's notice. Any type of bell pepper can be used and, if you have it, fresh oregano can replace dried.

INGREDIENTS

1 package (8 ounces) feta cheese, sliced in half horizontally
24 (1/4-inch-thick) slices small onion
1/2 green bell pepper, thinly sliced
1/2 red bell pepper, thinly sliced
1/2 teaspoon dried oregano leaves
1/4 teaspoon garlic pepper or black pepper
24 (1/2-inch-thick) slices French bread

PREPARATION:

  1. Spray 14-inch-long sheet of foil with nonstick cooking spray. Cut feta into 24 slices. Place onion slices in center of foil and top with feta slices. Sprinkle with bell pepper slices, oregano and garlic pepper. Seal foil using Drugstore Wrap technique.*
  2. Prepare grill for direct grilling. Place foil packet on grid upside down; grill on covered grill over hot coals 15 minutes. Turn packet over; grill on covered grill 15 minutes more.

    *Place the food in the center of an oblong piece of heavy-duty foil, leaving at least a two-inch border around the food. Bring the two long sides together above the food; fold down in a series of locked folds, allowing for heat circulation and expansion. Fold the short ends up and over again. Press folds firmly to seal the foil packet.

  3. Open packet carefully. Serve immediately with slices of French bread.
