Grilled Canadian Bacon Tomato and Cheese Sandwiches

INGREDIENTS

8 slices rye bread or whole wheat bread
6 ounces thinly sliced reduced-fat Cheddar cheese
4 ounces thinly sliced Canadian bacon
1 plum tomato, thinly sliced
2 teaspoons toasted wheat germ
Nontick cooking spray
2 teaspoons butter or margarine

PREPARATION:

  1. Top four bread slices with half of cheese. Layer bacon and tomato slices and tomato on top. Sprinkle with wheat germ. Top with remaining cheese and bread slices.
  2. Spray nonstick griddle or large nonstick skillet with cooking spray. Cook sandwiches over medium heat about 5 minutes or until toasted. Turn sandwiches. Add butter to griddle. Cook 4 to 5 minutes more or until cheese melts and sandwiches are toasted.
