Grilled Feta with Peppers


Yield

Makes 8 servings

Ingredients

1/4 cup thinly sliced sweet onion
1 package (8 ounces) feta cheese, sliced in half horizontally
1/4 cup thinly sliced green bell pepper
1/4 cup thinly sliced red bell pepper
1/2 teaspoon dried oregano leaves
1/4 teaspoon garlic pepper or black pepper
24 (1/2-inch) slices French bread

Preparation

  1. Spray 14-inch-long sheet of foil with nonstick cooking spray. Place onion slices in center of foil and top with feta slices. Sprinkle with bell pepper slices, oregano and garlic pepper.
  2. Seal foil using Drugstore Wrap technique (See tip below.) Place foil packet on grid upside down and grill on covered grill over hot coals 15 minutes. Turn packet over; grill on covered grill 15 mintues more.
  3. Open packet carefully and serve immediately with slices of French bread.

Drugstore Wrap

Place food in the center of an oblong piece of heavy-duty foil, leaving at least a 2-inch border around the food. Bring two long sides together above the food; fold down in a series of locked folds, allowing for heat circulation and expansion. Fold short ends up and over again. Press folds firmly to seal the foil packet.
