Grilled Meat Loaf
Yield: Makes 4 to 6 servings
Ingredients:
1-1/2
pounds ground beef chuck or ground beef sirloin
1/2
cup seasoned dry bread crumbs
2/3
cup chili sauce, divided
1/3
cup grated onion
1
egg
1/2
teaspoon black pepper
1/4
teaspoon salt
2
tablespoons packed light brown sugar
1
tablespoon spicy brown or Dijon mustard
Preparation:

Prepare barbecue grill for direct cooking. Combine beef, bread crumbs, 1/3 cup chili sauce, onion, egg, pepper and salt in large bowl; mix well. On cutting board or cookie sheet, shape mixture into 9X5-inch oval loaf, 1-1/2 inches thick.

Combine remaining 1/3 cup chili sauce, sugar and mustard in small bowl; mix well. Set aside. Place meat loaf on grid. Grill meat loaf, on covered grill, over medium-hot coals 10 minutes. Carefully turn meat loaf over using 2 large spatulas.

Brush chili sauce mixture over top of meat loaf. Continue to grill, covered, 10 to 12 minutes until no longer pink in center. (If desired, insert instant-read thermometer* into center of thickest part of meat loaf. Thermometer should register 160°F.) Let stand 10 minutes before slicing. Serve with mashed potatoes and peas and carrots, if desired.
*Do not leave instant-read thermometer in meat loaf during grilling since thermometer is not heatproof.
