Prep Time: 15 minutes
Cook Time: 8 minutes
Yield: Makes 4 servings
Ingredients:
1
97% fat-free reduced-sodium ham steak (about 1 pound)
1/2
cup fat-free reduced-sodium chicken broth
2
large peaches, peeled and sliced or 2 cups frozen sliced peaches, thawed
1-1/2
teaspoon lemon juice
2

Preparation:
1.
Heat large nonstick skillet over medium-high heat until hot. Place ham in skillet; cook, turning once, about 4 minutes or until well browned on both sides. Remove ham from skillet. Cover loosely with foil to keep warm.
2.
Add garlic to skillet; cook and stir 30 seconds. Stir in broth. Increase heat to high. Bring to a boil; cook 5 minutes or until slightly thickened. Stir in peaches; cook about 2 minutes or until softened. Stir in lemon juice. Transfer mixture to blender or food processor container; blend until coarsely puréed.
3.
Remove ham from skillet. Cut into 4 pieces. Spoon peach sauce over ham pieces. Sprinkle with green onions.
