Yield: Makes 2 servings
Jazz up oatmeal with apples, raisins and cinnamon–what a great way to start the day! Jonathan, Cortland, Gala or Golden Delicious apples are a good choice for this dish, since they retain their shape during cooking.
Ingredients:
Apple slices for garnish (optional)

cup unsweetened apple juice

cup water

1
medium apple, cored and chopped

1
cup uncooked old-fashioned oats

1/4
cup raisins

1/8
teaspoon salt

1/8
teaspoon ground cinnamon



Preparation:
1.
Combine juice, water and apple in 2-quart microwavable bowl. Microwave on HIGH 3 minutes, stirring halfway through cooking time.

Add oats, raisins, salt and cinnamon; stir until well blended.

Microwave on MEDIUM 4 to 5 minutes or until thick; stir before serving. Garnish with apple slices, if desired.


Conventional Directions: To prepare on the stove, bring apple juice, water and apple to a boil in medium saucepan over medium-high heat. Stir in oats, raisins, salt and cinnamon until well blended. Cook, uncovered, over medium heat 5 to 6 minutes or until thick, stirring occasionally.
