Hearty Mushroom and Barley Soup

INGREDIENTS

9 cups chicken broth
1 package (16 ounces) sliced fresh button mushrooms
1 large onion, chopped
2 carrots, chopped
2 stalks celery, chopped
1/2 cup uncooked pearled barley
1/2 ounce dried porcini mushrooms
3 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon black pepper

PREPARATION:

Slow Cooker Directions

  1. Combine all ingredients in 5-quart slow cooker; stir until well blended. Cover; cook on LOW 4 to 6 hours.
Variation
For even more flavor, add a beef or ham bone to the slow cooker with the rest of the ingredients.
