Heirloom, Mozzarella, and Fresh Pesto Stacks

INGREDIENTS

2 large heirloom tomatoes
4 small balls fresh mozzarella
¼ cup fresh pesto
Olive oil, balsamic vinegar, and sea salt to taste.

PREPARATION:

  1. Slice the tomatoes into 1 ½ inch thick slices.
  2. Slice the mozzarella in similar sized slices.
  3. Start with a slice of tomato, a slice of mozzarella, and a thick slather of pesto. Stack two more rounds on top and finish with a slather of pesto.
  4. Dress with a drizzle of olive oil, balsamic, and a pinch of sea salt.
