Heres Looking at You Kid Chicken Salad

"Here's Looking at You, Kid" Chicken Salad
Yield: Makes 16 servings
Ingredients:

large cucumbers (about 12 ounces each)

1
can (5 ounces) chicken breast meat, drained

tablespoons mayonnaise

Black olive slices or about 8 medium pitted olives, sliced (about 1-1/2 ounces total)



Preparation:
1.
Peel and cut cucumbers into 16 rounds total (each about 1-1/2 inches thick). Use 1/2-teaspoon measuring spoon to remove seeds. Hollow out half of cucumber centers to make cups; set aside.

2.
Mix chicken and mayonnaise in small bowl until well blended.

3.
Stuff each cucumber cup with 1 heaping teaspoon chicken mixture.

4.
Cut 16 olive slices into pieces to make face decorations. Top each stuffed cucumber with 2 olive pieces for eyes, 1/4 of olive slice for nose and 1/2 of olive slice for smile.
