I made these for a recent supper club and they were a hit. They're like thin mints on crack! What could be better? The mint adds just enough jazz to your standard recipe so that you're not making the same old same old but you still get to have brownies! I made these again as a little surprise for my husband on Valentine's Day because I knew the idea of him attempting to bake would be hard to swallow.
INGREDIENTS
| 2 oz | organic unsweetened chocolate |
| 1 stick | local butter |
| 3 | local eggs |
| ½ cup | sugar |
| 2/3 cup | cake flour |
| ½ tsp | baking powder |
| ½ tsp | salt |
| ½ tsp | vanilla |
| ½ tsp | mint extract |
| Top with a dollop of organic vanilla ice cream | |
PREPARATION:
- Preheat oven to 350 degrees.
- Melt the chocolate in a double boiler.
- Cut stick of butter into larger chunks and add to bowl. Beat in eggs gradually, then sugar, and melted chocolate.
- Sift flour and baking powder together and then add to mix.
- Add in vanilla and mint extract. Mix until smooth.
- Bake for 20 minutes.
