Barbeque Sauce

My daughter had a hankering for some barbeque ribs the other day. Usually she wants some kind of Asian sauce on them, but this time around she wanted a traditional tomato based barbeque sauce. I found a recipe that sounded like exactly what she wanted, but it called for the ribs to be baked in the oven first and then finished on the grill.

I don't have an oven at the cottage, so I wasn't sure how I was going to achieve this. I've tried boiling them first in the past, but I find that a deeply unappealing way of cooking them. Then I realized that I had brought my trusty crock pot to the cottage with me and I could cook them in that first. I put a spicy rub on them and then put them in the crock pot for about two hours at High and it worked perfectly. They were cooked through, and then I put them on the grill with the barbeque sauce and they were delicious. If you are vegetarian or vegan, you can easily use this barbeque sauce on grilled tofu as well.

I liked this because it wasn't as sweet as a lot of barbeque sauces, and the flavour of the garlic and ginger really stands out. We don't normally use ketchup in our house, I just buy it in the summer for guests. Later in the season when the tomatoes come in I'd like to try making ketchup myself, and then I could try using it in this recipe.

INGREDIENTS

1 1/2 cups chopped onion (from 1 large)
6 garlic cloves, finely chopped
1 1/2 tablespoons finely chopped peeled fresh ginger
1 1/2 cups ketchup
1/2 cup cider vinegar
6 tablespoons soy sauce
1/2 cup water
1/4 cup packed dark brown sugar
1 1/2 teaspoons salt
3/4 teaspoon black pepper

PREPARATION:

  1. Cook onion, garlic, and ginger in oil in a 2-quart heavy saucepan over moderate heat, stirring occasionally, until softened, about 6 minutes. Add remaining ingredients and simmer, uncovered, stirring occasionally, 15 minutes.
  2. Puree sauce in 2 or 3 batches in a blender until smooth (use caution when blending hot liquids) or with an immersion blender.
