Honeyed Beets

Yield: Makes 4 servings
Beets have more sugar than any other vegetable but are still low in calories at only 60 per cup.
Ingredients:

cup unsweetened apple juice
2
tablespoons cider vinegar
1
tablespoon honey
2
teaspoons cornstarch
2
cans (8 ounces each) sliced beets, drained
Salt (optional)
Black pepper (optional)
Preparation:

Combine apple juice, vinegar, honey and cornstarch in large nonstick saucepan. Cook, stirring occasionally, over medium heat until simmering. Stir in beets; season to taste with salt and pepper, if desired. Simmer 3 minutes.
