Hot Pasta with Cool Tomato Salsa
Prep and Cook Time: 20 minutes
Yield: Makes 4 servings
Ingredients:
1
package (9 ounces) uncooked refrigerated linguine or fettuccine
1
tablespoon olive oil
3-1/2
cups chopped tomatoes (about 3 large)
1/4
cup chopped red onion
1/4
cup loosely packed fresh basil leaves, torn into small pieces
1/2
teaspoon bottled minced garlic
1/4
cup fat-free red wine or balsamic vinaigrette salad dressing
1/4
teaspoon salt
1/8
teaspoon black pepper
1/4
cup grated Parmesan cheese
Preparation:
1.
Cook pasta according to package directions. Drain; toss with olive oil.
2.
While pasta is cooking, combine tomatoes, onion, basil and garlic in medium bowl. Add dressing, salt and pepper; toss.
3.
Top each portion of pasta with tomato salsa and 1 tablespoon cheese.
Hint:
Give your salsa extra flavor, color and crunch by adding diced zucchini to the tomato mixture.
