Hot Pasta with Cool Tomato Salsa
Prep and Cook Time 20 minutes
Makes 4 servings
|1||package (9 ounces) uncooked refrigerated linguine or fettuccine|
|1||tablespoon olive oil|
|3-1/2||cups chopped tomatoes (about 3 large)|
|1/4||cup chopped red onion|
|1/4||cup loosely packed fresh basil leaves, torn into small pieces|
|1/2||teaspoon bottled minced garlic|
|1/4||cup fat-free red wine or balsamic vinaigrette salad dressing|
|1/8||teaspoon black pepper|
|1/4||cup grated Parmesan cheese|
- Cook pasta according to package directions. Drain; toss with olive oil.
- While pasta is cooking, combine tomatoes, onion, basil and garlic in medium bowl. Add dressing, salt and pepper; toss.
- Top each portion of pasta with tomato salsa and 1 tablespoon cheese.
Give your salsa extra flavor, color and crunch by adding diced zucchini to the tomato mixture.
