While an ice cream maker is certainly a useful tool, the fact of the matter is that it's just one more thing that you have to buy which means more consumption, an eco-no-no. This recipe is from Divine Chocolate, a company that I've written about before because I think they are a quality company with a great mission of helping West African cocoa farmers receive fair wages for the work that they do. They also get a "social premium" which goes into a farmers' trust. This money goes back into their communities paying for the farmers' kids to go to school or paying for clean drinking water for the community. What could be a more delicious proposition?
I found this recipe via Mother Nature Network but it's actually from the Divine Chocolate Newsletter. Try this heavenly ice cream for a special treat. Figs add some true decadence to the flavor as well. You can use an ice cream maker if you have one and if that's the case, use it after Step 3.
Divine Fair Trade Chocolate Ice Cream
1/2 bar of Divine 70% dark chocolate
9 oz soft-dried figs
cup organic milk, chilled
3 tbsp superfine sugar (fair trade if you can find it)
1 cup cream, chilled
Method
1. Break up chocolate and chop as finely as possible in a food processor. Transfer to large bowl.
2. Chop the figs roughly in the food processor. Then add the milk and sugar and process until it's a smooth puree.
3. Whip the cream until soft peaks form. Fold in chopped chocolate and fig puree.
4. Freeze the entire mixture until firm.
Eat within a few days.
