Icy Mimosas

Yield: Makes 6 servings
Ingredients:
3
cups frozen Tropic Ice mix, crushed (recipe follows)

frozen whole strawberries with stems attached

cups diet ginger ale or Champagne

wine goblets, preferably frozen

cloth napkins (optional)



Preparation:
1.
Tie a napkin around the stem of each wine goblet, if desired. Spoon 1/2 cup of the shaved or crushed Tropic Ice mixture in each goblet. Pour 1/2 cup diet ginger ale or Champagne over each serving and add 1 frozen strawberry.

Tropic Ice
Yield: Makes 10 cups
Ingredients:
4
cups tropical fruit juice, such as pineapple, orange and banana

1
(12-ounce) can diet ginger ale

3/4
cup frozen white grape juice concentrate

1/2
cup dry white wine, such as a Chardonnay (see Note)



Preparation:
1.
Place all ingredients in a gallon resealable freezer plastic bag. Place in freezer overnight or until frozen.

2.
To serve, place the bag on the counter and, using a meat mallet, pound to break up large pieces of the frozen mixture or use a fork to scrape the frozen mixture into a slush. Store the remaining frozen mixture in freezer until needed. Mixture can be made ahead of time and stored in the freezer up to 1 month.


Note: The alcohol in the wine keeps the mixture from freezing rock hard. If you choose not to use the wine, the mixture will be harder, but can still be scraped with a fork or broken up with a mallet, after thawing slightly. You can also chop the ice in a food processor to make a slush.
