Italian Sausage with Pesto Pasta
Yield: Makes 6 servings
Ingredients:
1/2
cup packed basil leaves

1/4
cup plus 2 tablespoons walnuts, toasted, divided

2
cloves garlic, peeled

1/4
cup grated Parmesan cheese

tablespoons olive oil

1
package (12 ounces) uncooked linguine

1
pound cooked Italian sausage, cut into 1/2-inch slices

2
cups broccoli florets



 
Preparation:
1.
Combine basil, 1/4 cup walnuts and garlic in food processor or blender; process until smooth. Add cheese. With machine running, pour oil through feed tube and process until ingredients are well blended; set aside.

2.
Prepare pasta according to package directions. During last 2 minutes of cooking, add sausage and broccoli to pasta; drain.

3.
Combine pasta mixture with pesto and garnish with remaining 2 tablespoons walnuts. Serve immediately.
