Jamaican Baby Back Ribs
Yield: Makes 6 servings
Ingredients:

tablespoons sugar

tablespoons fresh lemon juice

1
tablespoon salt

1
tablespoon vegetable oil

2
teaspoons black pepper

2
teaspoons dried thyme leaves

3/4
teaspoon each ground cinnamon, nutmeg and allspice

1/2
teaspoon ground red pepper

6
pounds well-trimmed pork baby back ribs, cut into 3- to 4-rib portions

Barbecue Sauce (recipe)



 
Preparation:
1.
For seasoning rub, combine all ingredients except ribs and Barbecue Sauce in small bowl; stir well. Spread over all surfaces of ribs; press with fingertips so mixture adheres to ribs. Cover; refrigerate overnight.

2.
Prepare grill for indirect cooking. While coals are heating, prepare Barbecue Sauce.

3.
Place seasoned ribs on grid directly over drip pan. Grill, covered, 1 hour, turning occasionally. Baste ribs generously with Barbecue Sauce; grill 30 minutes more or until ribs are tender and browned, turning occasionally.

4.
Bring remaining Barbecue Sauce to a boil over medium-high heat; boil 1 minute. Serve ribs with remaining sauce.
