Jerk "Dino" Strips
Makes 4 servings
|1/4||cup reduced-fat mayonnaise|
|2||tablespoons orange marmalade or orange fruit spread|
|1||tablespoon fresh lime juice|
|1/4||teaspoon ground ginger|
|1/4||teaspoon garlic salt|
|1/4||teaspoon black pepper|
|1/8||teaspoon ground red pepper|
|1||pound boneless chicken breast strips|
- Preheat grill. Combine mayonnaise and orange marmalade in small bowl; set aside.
- Combine lime juice, sugar, salt, ginger, garlic salt, black pepper and red pepper in shallow bowl. Roll chicken strips in seasoning mixture. Set aside 5 minutes to absorb seasonings.
- Place chicken strips in grill basket over hot grid. Grill 3 to 4 minutes per side until cooked through. Serve chicken strips with orange dip.
If desired, broil chicken instead. Place on rack of broiler pan and broil 5 inches from heat 4 minutes per side until cooked through.
