The Killer Bar Copy Cat
I am writing this post from the southern tip of the island of Kauai. My family headed to Hawaii last week and since then, I have been indulging in all the treats found locally on this island paradise. One of the most decadent delights that I have found so far came in the form of a cookie called the Killer Bar. I found it at this quaint little health foods store hidden in a dumpy strip mall on the south end of the island. It's loaded with locally grown coconut and macadamia nuts. The cookie highlights the jewels of the island.
The farmers' market here was unlike any farmers' market that I had ever seen because I was able to find macadamia nuts and coconut right off the tree. We also found fresh mangoes, papaya, miniature bananas, and avocado. In short, we've done some eating here.
For those of you in a less exotic location (which is normally me), there are some simple substitutions that you can make for a more locally-sourced recipe. For example, use a nut that's found locally. Also use local butter and consider making your own sweetened condensed milk. It's really simple to make. You can also choose organic shredded coconut and Fair Trade Certified, organic chocolate.
These are simple to make and tremendously rich. A little goes a long way and that's no joke. When I made the recipe, I tried to get as close as possible to the Killer Bar.
INGREDIENTS
| 1 stick | local butter |
| 2 cups | graham cracker crumbs |
| 1 cup | organic chocolate chips |
| 1 cup | butterscotch chips |
| 1 cup | shredded coconut |
| 1 cup | macadamia nuts, chopped |
| 15 oz | sweetened condensed milk |
PREPARATION:
Method
- Melt butter in 9 x 13 inch pan.
- Press graham crackers in pan on top of butter.
- Combine the chocolate chips, butterscotch, coconut, and macadamia nuts.
- Pour sweetened condensed milk on top.
- Bake at 350 degrees for 25 to 30 minutes. Cool completely, cut into bars.
