Jicama & Citrus Salad


Makes 4 servings


1 (13-ounce) jicama, peeled and cut into short thin strips (about 4 cups)
2 large navel oranges, peeled and cut into sections
1 small red onion, thinly sliced
1/2 cup lime juice
1/3 cup sugar
1 jalapeño pepper, seeded and minced or 1/8 teaspoon red pepper flakes
1 teaspoon orange zest


  1. Combine all the ingredients in medium mixing bowl; mix well. Let stand 10 minutes before serving, stirring occasionally.
