Cookie Bars are the perfect treat for parties and big events because they have all the variety of cakes without the mess of big slices. Cookie Bars make entertaining easier.

Lemon Oat Bars

Yield: Makes 24 bars
Ingredients:
1
cup plus 2 tablespoons unsalted butter, softened and divided

1/2
cup packed brown sugar

1-1/2
cups all-purpose flour

1
cup uncooked quick-cooking oats

1/4
teaspoon salt

1-3/4
cups water, divided

1
package (4-serving size) lemon-flavored cook and serve pudding and pie filling mix

1/4
cup granulated sugar

2
egg yolks

Juice of 1 lemon

3
to 4 tablespoons powdered sugar



Preparation:
1.
Preheat oven to 375°F. Beat butter and brown sugar in large bowl with electric mixer on medium speed until light and fluffy. Add flour, oats and salt. Press into ungreased 13X9-inch baking pan. Bake 20 minutes or until golden; cool.

Meanwhile, combine 1/4 cup water, pudding mix, sugar and egg yolks in medium saucepan . Stir in remaining 1-1/2 cups water and lemon juice. Bring mixture to a boil, stirring constantly. Mixture will thicken. Cut remaining 2 tablespoons butter into small pieces. Remove pudding mixture from heat and stir in butter. Cool slightly; pour over crust. Chill at least 4 hours. Sprinkle with powdered sugar just before serving. Cut into bars.
