Lemon Pepper Pasta with Capers

When I was fashioning my Valentine's week of menus, I picked up on Heather Sperling's suggestion of a lemon pasta. I happen to be particularly fond of lemon and this recipe also has capers, which I think makes an unbeatable combination. This is an excellent dish to make if you want to prepare something nice, but you are on a limited budget. You can start with a small salad course, and then finish with dessert.
This recipe calls for Trader Joe's Lemon Pepper Pasta, but I live in Canada and we don't have Trader Joe's here. So I made my own pasta, adding the zest of a lemon and some cracked pepper and it turned out beautifully, with a very delicate lemon flavour. If you aren't going to make your own pasta, then a good quality dried pasta, or a fresh spinach pasta would also work here.
This is a very simple recipe, so even if you are a novice in the kitchen you could make this. Have all of the ingredients ready to go, you know, like a cooking show. Have the lemon zested and the garlic minced and the wet ingredients in bowls so that you can just add all the stuff in without forgetting anything, especially if your sweetheart is sitting in the kitchen with you sipping on a glass of wine while you cook. It makes for a bit more cleanup, but the actual cooking will be less stressful.
INGREDIENTS
| 3 large | garlic cloves, minced |
| Zest of 1 lemon | |
| 1 tablespoon | butter |
| 1 tablespoon | olive oil |
| 1 cup | chicken or vegetable broth |
| 1/4 cup | cream |
| 1/4 cup | capers |
| Salt and freshly ground pepper, to taste | |
| 1 (8‑ounce) | package Trader Joe's Lemon Pepper Pappardelle Pasta |
PREPARATION:
- Slowly cook the garlic and lemon zest in the butter and oil, in a heavy saute pan over medium heat. Stir frequently to keep the garlic from browning. When the garlic is soft, add the broth and turn the heat to high. Simmer until reduced by at least one half, and add the cream and capers. Turn the heat back to medium and simmer until thick and syrupy. Taste and season.
- Meanwhile, cook the pasta according to directions (2 quarts of salted water, 8-10 minutes). Pour the cream sauce over and toss. Serve immediately.
