Lemoned Shrimp with Basil
Yield: Makes 4 servings
Ingredients:
1
pound raw medium shrimp, peeled and deveined

cloves garlic, minced

1
teaspoon grated lemon peel

1/4
teaspoon seafood seasoning mix

1/4
teaspoon dried red pepper flakes

2
tablespoons diet margarine

tablespoons lemon juice

2
tablespoons chopped fresh basil



 
Preparation:
1.
Place a 12-inch nonstick skillet over medium heat until hot. Coat skillet with cooking spray. Add shrimp, garlic, lemon rind, seafood seasoning and red pepper flakes. Cook 4 minutes or until shrimp are opaque in center, stirring frequently.

Remove from heat; add remaining ingredients. Serve in individual baking dishes or ramekins.


Serving Suggestion Serve with cooked rice and steamed asparagus spears, if it fits into your meal plan.
