Liberty Bell Cake
Yield: Makes 16 servings
Start your 4th of July festivities off with a bang by serving this attractive and distinctive cake.
Ingredients:
1
(13X9-inch) cake

1
recipe Creamy White Frosting (recipe follows)

1
recipe Base Frosting (recipe follows)

Blue decorating gel

Red cinnamon candies

1
(19X13-inch) cake board, cut to fit cake if desired, covered

1
(1-1/2-inch) star cookie cutter



Preparation:
1.
If cake top is rounded, trim horizontally with long serrated knife. Trim sides of cake. Cut cake with serrated knife, using ruler as guide.

2.
Position pieces on prepared cake board, connecting with some of the Creamy White Frosting.

3.
Frost entire cake with Base Frosting to seal in crumbs. Frost again with remaining Creamy White Frosting.

4.
Gently press cookie cutter into frosting, leaving imprints as shown in photo. To outline each imprint, hold tip of gel tube just above frosting and gently squeeze tube while guiding tip in straight line over imprint. Stop squeezing, then lift gel tube at end of each star side. Evenly fill in each star with gel.

5.
Decorate with candies as shown in photo.





Creamy White Frosting

Yield: Makes enough to fill and frost 2 (8-inch) round or square cake layers or frost 1 (13X9-inch) cake
Ingredients:
1/2
cup shortening

6
cups sifted powdered sugar, divided

3
tablespoons milk

2
teaspoons clear vanilla extract

Additional milk*



Preparation:
1.
Beat shortening in large bowl with electric mixer at medium speed until fluffy. Gradually beat in 3 cups sugar until well blended and smooth. Carefully beat in 3 tablespoons milk and vanilla. Gradually beat in remaining 3 cups sugar, adding more milk, 1 teaspoon at a time, as needed for good spreading consistency. Store in refrigerator.





Base Frosting

Yield: Makes about 2 cups
Ingredients:
3
cups powdered sugar, sifted

1/2
cup shortening

1/4
cup milk

1/2
teaspoon vanilla

Additional milk



Preparation:
1.
Combine sugar, shortening, 1/4 cup milk and vanilla in large bowl. Beat with electric mixer on medium speed until smooth. Add more milk, 1 teaspoon at a time, until frosting is a thin consistency. Use frosting immediately.
