Chocolate Chip Pancakes
I'm a fan of any pancake, and variations like last month's sweet potato pancakes and today's chocolate chip pancakes simply make my heart melt. The idea of mixing light, fluffy buttermilk pancakes with dark, rich chocolate chips is difficult to beat. Last Sunday I took a traditional recipe for pancakes to the next level with organic chocolate chips. Usually, I'm not a fan of the conventional nature of chocolate chips, but it's a bit difficult to push hand cut chocolate chunks into a pancake, so I took the easy route this time.
Pancakes are always a great Sunday brunch idea because they're decadent and delicious, but made mostly with foods that you have in the pantry. It's a low consumption meal, meaning you use what you have on hand. I had a bunch of chocolate chips left over from a batch of my killer bars that I made this past weekend. The key to the recipe is to take a 1/3 measurement cup and add it to your griddle or skillet. As you do this, add the amount of the chocolate chips that you want, evenly distributed. Once the batter starts to bubble throughout, give it a flip. I think that buttermilk promotes a lighter and fluffier pancake when compared to regular milk or coconut milk, which I often use. INGREDIENTS
| 1 ½ cups | unbleached all purpose flour |
| 3 tbsp | sugar |
| 1 tsp | baking powder |
| ½ tsp | baking soda |
| 1 ½ cups | buttermilk |
| 3 tbsp | butter, melted |
| 2 | eggs |
| ½ tsp | vanilla extract |
PREPARATION:
Method
- Combine the dry ingredients then remove the lumps with a fork or a whisk.
- Combine the wet ingredients in a separate bowl.
- Gradually combine the wet and the dry ingredients with a whisk. Do not over mix. There will be lumps and that's fine.
- Use a 1/3 cup or a ladle to scoop the batter onto a nonstick buttered skillet or griddle. Add 1 tbsp chocolate chips to the pancake by carefully dispersing the chips.
- Flip when the pancake starts to bubble throughout. Cook on the other side until golden brown, about 3 minutes. Serve with good maple syrup and local butter.
