Low-Carb Waldorf Salad


Makes 6 servings


1 cup diced peeled Granny Smith apple (about 1 medium apple)
2 teaspoons lemon juice
2 cups diced celery
3/4 cup finely chopped iceberg lettuce
2 tablespoons chopped walnuts
1 tablespoon raisins
2 tablespoons reduced-fat or regular mayonnaise


  1. Place apple in medium bowl; sprinkle with lemon juice to keep from discoloring. Add celery, lettuce, walnuts and raisins; stir. Stir in mayonnaise until all ingredients are evenly coated. Refrigerate 2 to 3 hours before serving.
