Low-Fat Cajun Wedges

INGREDIENTS
| 4 | medium russet potatoes |
| Nonstick cooking spray | |
| 1 | tablespoon Cajun seasoning or other seasoning, such as paprika |
| Purple kale and fresh sage leaves, for garnish | |
PREPARATION:
- Preheat oven to 400°F. Scrub potatoes under running water with soft vegetable brush; rinse. Dry well. (Do not peel.) Line baking sheet with foil and spray with cooking spray.
- Cut potatoes in half lengthwise; then cut each half lengthwise into 3 wedges. Place potatoes, skin side down, in single layer on prepared baking sheet. Spray potatoes lightly with cooking spray and sprinkle with seasoning.
- Bake 25 minutes or until browned and fork-tender. Serve immediately.
Low-Fat Cottage Fries
Follow step 1 as directed. Cut potatoes crosswise into 1/4-inch-thick slices. Place in single layer on prepared baking sheet; spray and season as directed. Bake 15 to 20 minutes or until browned and fork-tender. Serve immediately.
Low-Fat Potato Chips
Follow step 1 as directed. Slice potatoes crosswise as thin as possible. Place in single layer on prepared baking sheet; spray and season as directed. Bake 10 to 15 minutes or until browned and crisp. Serve immediately.
