Low-Fat Cajun Wedges

INGREDIENTS

4 medium russet potatoes
Nonstick cooking spray
1 tablespoon Cajun seasoning or other seasoning, such as paprika
Purple kale and fresh sage leaves, for garnish

PREPARATION:

  1. Preheat oven to 400°F. Scrub potatoes under running water with soft vegetable brush; rinse. Dry well. (Do not peel.) Line baking sheet with foil and spray with cooking spray.
  2. Cut potatoes in half lengthwise; then cut each half lengthwise into 3 wedges. Place potatoes, skin side down, in single layer on prepared baking sheet. Spray potatoes lightly with cooking spray and sprinkle with seasoning.
  3. Bake 25 minutes or until browned and fork-tender. Serve immediately.
Low-Fat Cottage Fries
Follow step 1 as directed. Cut potatoes crosswise into 1/4-inch-thick slices. Place in single layer on prepared baking sheet; spray and season as directed. Bake 15 to 20 minutes or until browned and fork-tender. Serve immediately.
Low-Fat Potato Chips
Follow step 1 as directed. Slice potatoes crosswise as thin as possible. Place in single layer on prepared baking sheet; spray and season as directed. Bake 10 to 15 minutes or until browned and crisp. Serve immediately.
