Tasty Tofu Brownies (adapted from a recipe on the Mori Nu website)

On his birthday, Ed tries his hand at baking vegan tofu brownies. You don't have to be on a vegan diet to enjoy, and reap the benefits of, dessert recipes made with wholesome ingredients such as tofu, black beans, or pumpkin. Just think of it as multitasking: why not get a little bang for your nutrition buck while you're indulging in a decadent sweet? If you are baking for kids or anyone else who might be reluctant to eat healthy foods, these brownie recipes are a great way to sneak in that extra nutrition. Top with soy icing and some chopped walnuts or vegan sprinkles, and you have yourself a true birthday treat!

INGREDIENTS

What you'll need
1‑1/3 cups cake flour
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 cup unsweetened applesauce
1 tsp. canola oil
3/4 cup unbleached granulated sugar
1 package firm tofu
1 tsp. vanilla extract
1/3 cup cocoa powder (try Green & Black's fair-trade organic cocoa)

PREPARATION:

What to do

  1. Preheat oven to 350 degrees. Grease an 8 x 8" baking pan (try using a vegan buttery spread such as Earth Balance). Mix the dry ingredients together in a bowl. In a separate bowl, blend the wet ingredients until the mixture is smooth. (You may want to use a food processor or blender, but of course good old elbow grease works fine.) Add the dry ingredients and mix until just blended. Bake for 20 minutes or until brownies pull away from sides of pan. Let cool for 15 minutes. Makes 12 brownies.

Substitutions and Suggestions

  1. You can make this recipe even more nutritious by substituting whole-wheat flour for half the cake flour. You can experiment with larger amounts, but you will likely end up with a not-so-brownie-like result.
