Raymond and Nicole’s Mango Salsa and Plantain Chips

INGREDIENTS
| Mango Salsa | |
| 3 | Plum Tomatoes |
| 1/2 | White Onion |
| 3 | Cloves of Garlic |
| 1/4 | Unripe (hard) mango |
| 1/4 | cup Fresh Cilantro |
| 3 | Jalapeños |
| 2 | ounces Fresh Pineapple |
| 1 | teaspoon Kosher Salt |
| Half of a Lime to squeeze on top when plating | |
| Chipotle Flavored Plantain Chips | |
| 6 | Green Plantains |
| 1 | tablespoon Garlic Powder |
| 1 | tablespoon Onion Powder |
| 1 | tablespoon Chipotle Seasoning |
| 1/2 | tablespoon Kosher Salt |
PREPARATION:
Mango Salsa
- Dice all the ingredients and stir the mixture.
- Refrigerate this mixture for at least one hour to allow all the flavors to incorporate well.
Chipotle Flavored Plantain Chips
- Slice the plantains into chips (fairly thin, about ¼ thick). Fry the chips. Add seasonings to taste.
