INGREDIENTS

Mango Salsa
3 Plum Tomatoes
1/2 White Onion
3 Cloves of Garlic
1/4 Unripe (hard) mango
1/4 cup Fresh Cilantro
3 Jalapeños
2 ounces Fresh Pineapple
1 teaspoon Kosher Salt
Half of a Lime to squeeze on top when plating
Chipotle Flavored Plantain Chips
6 Green Plantains
1 tablespoon Garlic Powder
1 tablespoon Onion Powder
1 tablespoon Chipotle Seasoning
1/2 tablespoon Kosher Salt

PREPARATION:

Mango Salsa

  1. Dice all the ingredients and stir the mixture.
  2. Refrigerate this mixture for at least one hour to allow all the flavors to incorporate well.

Chipotle Flavored Plantain Chips

  1. Slice the plantains into chips (fairly thin, about ¼ thick). Fry the chips. Add seasonings to taste.
