Maple Caramel Bread Pudding
Yield: Makes 6 servings
Is it possible that bread pudding this creamy and melt-in-your-mouth delicious could be low in fat? Absolutely–and so easy to prepare.
Ingredients:

slices cinnamon raisin bread
2
whole eggs
1
egg white
1/3
cup sugar
1-1/2
cups reduced-fat (2%) milk
1/2
cup maple syrup
1/2
teaspoon cinnamon
1/4
teaspoon nutmeg
1/4
teaspoon salt
6
tablespoons fat-free caramel ice cream topping
Preparation:

Preheat oven to 350°F. Spray 8X8-inch baking dish with nonstick cooking spray. Cut bread into 3/4-inch cubes; arrange in prepared dish.

Beat whole eggs, egg white and sugar in medium bowl. Beat in milk, syrup, cinnamon, nutmeg and salt; pour evenly over bread. Toss bread gently to coat.

Bake 45 minutes or until center is set. Transfer to wire cooling rack; let stand 20 minutes before serving. Serve warm with caramel topping.
