Have you ever heard of Meatless Monday?

I've written about Meatless Monday before. The Baltimore Public School District announced last year it would adopt a Meatless Monday menu for all 80,000 students it serves. According to Matthew over at TreeHugger, in a year of Meatless Mondays you would save about 1 ton of water, enough to fill up the bathtub 22 times per week. Giving up meat a few times a week isn't as much of a commitment as going completely vegetarian or vegan but it still makes a difference.
And now the trend is spreading like wild fire. Universities across the country are making Monday meatless in their cafeterias.
