Mediterranean Tuna Salad

INGREDIENTS

1/4 pound fresh green beans
1 can (12 ounces) tuna, drained, separated into chunks
2 tablespoons capers (optional)
1 (15-ounce) can Great Northern beans, rinsed and drained
1 large tomato, chopped
12 ripe Greek olives
Chopped fresh chives (optional)
Prepared Italian Dressing

PREPARATION:

  1. Cook green beans in slightly salted boiling water 5 minutes or until crisp-tender. Rinse with cold water; drain.
  2. Place tuna in center of serving platter; sprinkle with capers.
  3. Arrange Great Northern beans, tomatoes and olives around tuna; surround with green beans. Sprinkle with chives. Serve with dressing.
