Ingredients:

can (12 ounces) solid white tuna packed in water, drained
1/4
cup finely chopped red onion
1/4
cup fat-free mayonnaise
3
tablespoons chopped ripe olives, drained
1
tablespoon chopped fresh mint
1
tablespoon plus 1 teaspoon lemon juice
1
tablespoon olive oil
1/4
teaspoon black pepper
1/8
teaspoon garlic powder
4
thin slices tomato
8
slices whole wheat bread
Preparation:
1.
Combine tuna, onion, mayonnaise, olives, mint, lemon juice, olive oil, pepper, and garlic powder in large bowl.
2.
Top each of 4 slices bread with tomato slice. Spoon 2/3 cup tuna mixture over each tomato slice. Top with remaining bread slices. Cut sandwiches in half to serve.
