Mini Beef Tostadas

Makes 4 dozen

Ingredients

1 pound ground beef
1 tablespoon instant minced onion
1 can (8 ounces) refried beans
1 can (4 ounces) chopped green chilies, drained (optional)
1/2 cup bottled taco sauce
4 dozen round tortilla chips
1 cup (4 ounces) shredded Cheddar cheese

Preparation

  1. Preheat oven to 375°F. Cook and stir beef and onion in large skillet over medium heat about 10 minutes or until beef is no longer pink; drain and discard drippings.
  2. Stir in beans, chilies, if desired, and taco sauce; cook and stir until bubbly, about 4 minutes. Spoon about 1 heaping tablespoon of the beef mixture on top of each tortilla chip; sprinkle with cheese. Place on baking sheets.
  3. Bake until cheese is melted, about 2 minutes.
