Mini Blueberry-Citrus Muffins

INGREDIENTS

1 package (7 ounces) blueberry muffin mix
1 egg white
1‑1/2 tablespoons lemon juice
1 teaspoon grated orange peel
1/2 teaspoon grated lemon peel

PREPARATION:

  1. Preheat oven to 425° F. Spray 12 miniature (1-3/4-inch) nonstick muffin pan cups with nonstick cooking spray; set aside.
  2. Combine all ingredients in medium bowl; stir until just blended. Do not overmix. Spoon batter into prepared pan. Bake 12 to 15 minutes or until just golden. Remove to wire rack; cool.
