Mini Turkey Loaves
Yield: Makes 4 servings
Ingredients:
1
pound ground turkey

1
small apple, chopped

1/2
small onion, chopped

1/2
cup uncooked old-fashioned oats

2
teaspoons Dijon mustard

1
teaspoon dried rosemary

1
teaspoon salt

Dash black pepper

Cranberry sauce

Vegetable Stir-Fry (recipe follows)

Mashed potatoes (optional)



Preparation:
1.
Preheat oven to 425°F. Grease 12 (2-1/2-inch) muffin cups. Combine turkey, apple, onion, oats, mustard, rosemary, salt and pepper in large bowl. Press into prepared muffin cups. Bake 20 minutes or until lightly browned and no longer pink in center. Top with cranberry sauce. Garnish as desired. Serve with Vegetable Stir-Fry and mashed potatoes, if desired.

Vegetable Stir-Fry

Ingredients:

tablespoon vegetable oil

to 4 carrots, diagonally sliced

zucchini, diagonally sliced

3
tablespoons orange juice

Salt and pepper



Preparation:
1.
Heat oil in medium skillet or wok over medium heat. Add carrots; stir-fry 3 minutes. Add zucchini and orange juice; stir-fry 4 minutes or until vegetables are crisp-tender. Season with salt and pepper to taste.
