Moms Favorite Brunch Casserole


For an extra special touch that Mom is sure to love, garnish the top of this baked casserole with a bunch of tomato roses just before serving.

Makes 10 servings

Ingredients

6 eggs
1 cup plain yogurt
1 cup (4 ounces) shredded Cheddar cheese
1/2 teaspoon black pepper
1 cup finely chopped ham
1/2 can (8 ounces) pasteurized process cheese

Preparation

  1. Preheat oven to 350°F. Lightly grease 12X8-inch baking dish.
  2. Combine eggs and yogurt in medium bowl; beat with wire whisk until well blended. Stir in Cheddar cheese and pepper.
  3. Place ham in prepared baking dish; pour egg mixture over ham. Bake 25 to 30 minutes or until egg mixture is set. Use process cheese to write "MOM" or other desired message to Mom on top of casserole; let stand 2 to 3 minutes or until cheese is slightly melted.

Variation

Substitute 1 pound bulk pork sausage, browned and drained, for ham.
