Mornay Sauce
YIELD Makes 2 cups

INGREDIENTS
| 1/4 | cup plus 2 tablespoons butter |
| 1/4 | cup plus 2 tablespoons all-purpose flour |
| 1 | teaspoon salt |
| 2 | cups milk, warmed |
| 1/4 | cup plus 2 tablespoons grated Romano cheese |
| Dash ground nutmeg | |
PREPARATION:
- Melt butter in 2-quart saucepan over medium heat. Add flour and salt; stir to blend. Add milk; stir to blend. Bring to a boil over high heat, stirring constantly.
- Reduce heat to low; simmer uncovered, 1 to 2 minutes until slightly thickened.
- Remove from heat. Stir in cheese and nutmeg.
